Roasted Broccoli

Here’s a way to liven up some broccoli — roast with with lemon, garlic and pine nuts, as found at Jungle Jim’s International Market’s The Cooking School.


  • 1 large bunch broccoli (about 1.5 pounds)
  • 3 tbs. olive oil
  • 1 clove garlic, minced
  • salt and pepper
  • juice of 1/2 lemon
  • 1/2 cup grated Parmesan cheese
  • 2 tbs. toasted pine nuts


Preheat oven to 400.  Trim broccoli stalks to 2 inches below the crowns, and then cut into bite-sized pieces.  Place pieces on rimmed baking sheet.  Combine olive oil and garlic in a small bowl and drizzle over broccoli; sprinkle salt and pepper.  Roast broccoli until beginning to brown, stirring once (about 12 – 15 minutes).  Remove from oven and sprinkle with lemon juice, cheese and pine nuts, tossing to coat.
