For some odd reason, I carry a belief that I don’t like coconut. Then I try something with coconut and realize that I actually find it pretty delightful. So goes with Emmy’s Organics Coconut Cookies — organic, gluten-free, soy-free, vegan cookies.
Fans of coconut (and even semi-fans) will love these soft, bite-sized cookies that come in a variety of flavors, including Chocolate Chip, Dark Cacao, Lemon Ginger, Raspberry, Vanilla Bean, and Peanut Butter.
Recently, our office received a box of samples and I took them with me to a photo shoot for a taste taste with the grown-ups and kiddos on the scene — the toughest panel of judges I could think of. After sampling a little bit of everything, we decided that Vanilla Bean was the overall favorite (although I tried a raspberry cookie later and may have to change my vote!), and the Peanut Butter somehow reminded us of a sweet Pad Thai — which was not a bad thing at all! One of our taste testers was ecited to bring some of the cookies to her father, who has to watch his carb, sugar and sodium intake and who is also a big fan of those Neapolitan coconut candies. We’re hoping it’s his new favorite thing!
The cookies are made in solar and wind-powered facility (very cool) and uses recycled packaging (super cool), and if you’re at all a “foodie,” I recommend checking out their Instagram feed (@emmysorganics) for some luscious snack-able ideas. (I foresee a snack for myself that involves bananas and the peanut butter cookies!)
