Where’s the Beef? Right Here!

Enjoy one of these ground beef recipes with your family this weekend:

 

MEATLOAF

Ingredients:
1-1/2 pounds ground beef
1/2 cup brown sugar
1/2 cup ketchup
2 eggs
1-1/2 teaspoons salt
3/4 cup milk
1/4 teaspoon black pepper
1 small onion, chopped
1/4 teaspoon ground ginger
3/4 cup finely crushed crackers

Directions:
Preheat oven to 350 and lightly grease a loaf pan.

Press the brown sugar into the bottom of the pan, then spread the ketchup on top of the sugar.

Mix the remaining ingredients together and shape into a loaf and transfer to pan. Bake for one hour.

 

BEEF & MACARONI BAKE

Ingredients:
1 pound ground beef
1 box of macaroni and cheese
1/3 cup grated parmesan, divided
1 small onion, chopped
1 can tomato sauce (15 ounces)
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
2 tablespoons flour
2 tablespoons butter
2 eggs, beaten
1-1/2 cups milk

Directions:
Prepare the mac and cheese as directed.

Brown the ground beef in a large skillet, then drain. Add onions, stirring for 5 minutes or until they are tender. Mix in the tomato sauce, the spices and half of the parmesan cheese. Simmer 10 minutes, stirring occasionally.

Pour the meat mixture into a greased baking dish and top with the mac and cheese.

Melt the butter on low heat, blend in the flour and gradually stir in the milk. Cook until thickened, stirring constantly. Add the eggs then pour on top of the mac and cheese, then top with the remaining parmesan.

Bake for 45 minutes on 350.

 

TACO SOUP

Ingredients:
1/2 pound ground beef
1/3 cup chopped onion
1-1/2 cups water
1 (15 ounce) can kidney beans with liquid
1 (16 ounce) can diced stewed tomatoes with juice
1 (8 0unce) can tomato sauce
1 diced avocado
2 tablespoons taco seasoning
1 cup cheddar cheese
corn chips
sour cream

Directions:
In a saucepan over medium heat, cook the beef and onion until meat is evenly brown, then drain the excess grease. Mix in water, tomatoes, beans, tomato sauce and taco seasoning. Cover and simmer for 15 minutes. Remove from stove and add the avocado.

In the soup bowls, top with chips, cheese and sour cream.
