Shaw Farms’ Zucchini Noodles With Pesto

It’s another tasty recipe from Pam Shaw of Shaw Farms!  “This is such a great alternative to traditional pasta,” says Shaw.  “It is also wonderful the next day for lunch.  So make enough and enjoy!”

Shaw Farms’ Zucchini Noodles With Pesto

Ingredients

  • 3 large zucchini (about 3 pounds)
  • 1 teaspoon mince garlic (or 1 clove finely chopped)
  • 1 cup cherry tomatoes halved
  • 2 tablespoons pesto
  • 1/3 cup grated parmesan cheese
  • 2 tablespoons olive oil

Directions

Slice zucchini into noodles by using one of the many spiralizers available or a simple grater.  Cut tomatoes in half.  Place olive oil in pan along with garlic.  Heat on medium high.  Add noodles, coating with oil.  Cook just until heated through.  Turn off burner and add tomatoes, pesto, salt and pepper.  Toss until coated.  Top with parmesan cheese and garnish with fresh basil if available.
