Chicken Biscuit Potpie

 Serves 6

 Prep Time: 10 minutes
 Cook Time: 25 minutes

1-2/3 cups frozen mixed vegetables, thawed
2 diced boiled potatoes
1-1/2 cups cubed cooked chicken
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1/4 teaspoon dried thyme
1 cup biscuit/baking mix
1/2 cup milk
1 egg

In a bowl, combine vegetables, chicken, soup and thyme. Pour into an ungreased deep-dish 9-inch pie plate. Combine biscuit mix, milk and egg; pour over chicken mixture. Bake at 400 degrees for 25 minutes or until golden brown.
