So I kept hearing about these magic muffins that required only two ingredients to make — a can of pumpkin and a box of cake mix, in just about any flavor (although we heard that devil’s food and spice cake were the best options). Decided to give it a whirl, since I happened to have a can of pumpkin and a yellow cake mix sitting in the cupboard. I had my doubts as I mixed up a pretty thick batter, but you know what? By golly, it worked! I got a dozen muffins that were moist and tasty, so now I’m on to try it out with a chocolate version! Below is my own concoction, but I like the looks of this one from the blog I Heart Naptime (pictured)! – Sherry Hang
Ingredients:
- One 15 oz. can pumpkin
- One box yellow cake mix
I added some extra spices to give it a fall flavor, and made a crumble topping to sprinkle on top:
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. ginger
For crumble topping (kind of guessing here, because I pretty much just eyeballed everything):
- 1/4 cup brown sugar
- 2 tbs. flour
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1/4 tsp. clove
