A friend has a farm with chickens in Grant County, Kentucky, and surprised us one day with a couple dozen farm fresh eggs.  But with only a couple egg eaters in the house, what to do with so many?  A quiche, of course!  And since the oven was going to be on, why not whip up a batch of 7-Up biscuits to serve on the side?

Quiches are great in that you can add just about any ingredients you like — ham, tomatoes, spinach, peppers … we like things spicy in our house, so we opted for mushrooms, jalapeno peppers and cheddar cheese.

Quiche

  • 8 – 12 eggs
  • 1 cup mushrooms
  • 1/4 cup jalapeno peppers
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1 ready-made pie crust

Grease a 9-inch pie pan, and lay out your ready-made pie crust.  Cook the mushrooms and peppers in a skillet and then drain on a paper towel.  Mix eggs, milk, mushrooms, peppers and cheese in a large bowl and pour into pie crust.  Bake at 350 for 45 minutes.

 

7-Up Biscuits

  • 4 cups Bisquick baking mix
  • 1 cup sour cream
  • 1 cup 7-Up, room temperature
  • 1/2 cup butter

Melt the butter in a 9×13 baking dish.  Mix baking mix, sour cream and 7-Up to form a very soft dough.  Dump over melted butter and bake at 425 for 10 – 15 minutes, or until golden brown on top.  Let rest for a few minutes so remainder of butter can absorb into biscuits, then cut and serve with honey!
