Picky eaters make for a tough crowd, especially when it comes to eating their veggies.  Here’s a trick: hide those veggies in your pasta sauce, and try this recipe from UR Kids’ World.

Ingredients

  • 1 small carrot
  • 1 stick of celery
  • handful of baby spinach leaves
  • 2 whole tomatoes
  • 250ml jar of tomato paste
  • 2 cloves of garlic, crushed
  • 2 skinless chicken breasts
  • dash of olive oil
  • teaspoon of mixed Italian seasonings
  • 500ml of chicken stock

Directions

Chop the chicken into small pieces and cook in a saucepan over medium heat with the olive oil and garlic cloves. Add the Italian seasonings and cook until chicken is cooked all the way through.  Add the chicken stock and stir in the tomato paste. Turn the heat down and simmer, stirring occasionally.  Dice up the remaining vegetables and put them in a blender or food processor to blend into a smooth puree. Pour the puree into the saucepan and cook for 5 minutes. Pour sauce and chicken over your favorite type of cooked pasta!
