Experts say breakfast is the most important meal of the day for kids to get their brains going before their school day. Breakfast for kids can be easy and fun. Here a few ideas they are sure to dig.

 

PEACHY KEEN OATMEAL

Ingredients:
2 cups quick cooking rolled oats
3-1/2 cups milk
1/8 teaspoon salt
1/4 cup brown sugar
1/2 cup chopped finely chopped walnuts
1/4 teaspoon cinnamon
2 fresh peaches (peeled and sliced)

Directions:
Boil milk and salt over medium high heat, then add the oatmeal and cook, stirring constantly, until most of the milk is absorbed.

Stir in cinnamon, brown sugar and walnuts.

Place in bowls and top with sliced peaches.

 

HAM & CHEDDAR EGGS

Ingredients:
10 eggs
1-1/2 teaspoon butter
2 tablespoons milk
1 teaspoon salt
1/4 teaspoon black pepper
1-1/4 cups cooked ham (diced)
1-1/2 cups shredded cheddar cheese
1/3 cup fresh chives (finely chopped)

Directions:
Melt butter in a large nonstick skillet over medium heat, then add ham. Cook until brown.

Whisk together eggs, milk , salt and pepper. Pour mixture into the pan with the ham, stirring occasionally until eggs are firm (about 5 minutes). Stir in chives and eggs before serving.

 

BACON & EGG PIZZA

Ingredients:
1 can crescent rolls (8 ounces)
12 crumbled strips of cooked bacon
1 cup frozen (shredded) hash browns
3/4 cup shredded cheddar
4 eggs
1/2 cup parmesan
1/8 cup fresh basil (finely chopped)

Directions:
Unroll dough into a long rectangle and press into a greased 9/13 baking dish (press 1/2 inch up the sides of the pan). Seal the seams.

Sprinkle with cheese, potatoes and bacon.

Beat eggs and milk, then stir in the basil. Pour over the bacon/potato/cheese and sprinkle with parmesan.

Bake at 375 for approximately 30 minutes (or until knife inserted in the center comes out clean).

 

PEANUT BUTTER & JELLY FRENCH TOAST

Ingredients:
Sliced bread
Peanut butter (smooth or chunky, your choice!)
Favorite flavor of jelly or jam
3 eggs
3/4 cup milk
2 tablespoons butter

Directions:
Form peanut butter and jelly sandwiches.

Whisk eggs and milk together.

Melt butter over medium high heat. Dip both sides of the sandwiches in egg/milk mixture and cook 2 to 3 minutes on each side until golden brown.
