Found this recipe for baked pancakes at Six Sisters Stuff, and loved the suggestion of cutting them into squares once they’ve cooled, popping them into Ziploc bags and storing in the freezer for a handy, on-the-go breakfast.
Ingredients
- 1 1/2 cups milk
- 1/4 cup butter, melted
- 2 eggs
- 2 tbs. sugar
- 2 cups all-pupose flour
- 3 tsp. baking powder
- 1/2 tsp. salt
Directions
Preheat oven to 350 degrees. Spray a 9×13″ baking pan with non-stick cooking spray. In a large bowl, mix together milk, butter and eggs. Mix in remaining ingredients, then pour batter into pan. Cook for 25 – 30 minutes. Let cool for five minutes, then cut into squares and serve (or let cool completely, then store squares in the freezer!).
