Ever since I introduced my brother to the sugary goodness that is Biscoff Cookie Butter, he’s been a fan.  So naturally, when special occasions arise, I look for treats that incorporate the good stuff into the recipe.  Most recently, I decided to go meta with cookie butter cookies.  After scouring Pinterest for recipes, I decided to try out the one from Sally’s Baking Addiction, since she hasn’t steered me wrong in the past on a few other experiments.  And with a couple changes (mostly doubling the recipe, going a smidge overboard on the cookie butter and swapping out semi-sweet chocolate chips with white chocolate chips), voila, cookie butter cookies!  

  • 1/2 cup softened butter (Sally says to use unsalted, but salted was what I had on hand, so I just reduced the amount of salt I added to the batter)
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 egg
  • 1 egg yolk
  • 2 tsp. vanilla
  • 1/2 cup Biscoff cookie butter (OK, I used a very generous system of measurement here)
  • 2 1/4 cups flour
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 1/2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1 1/4 cup chocolate chips (I used white chocolate)
  • Combine flour, baking soda, corn start, cinnamon and salt in a bowl and set aside.  Cream butter and sugar, then add egg, yolk and vanilla.  Beat in cookie butter.  Add dry ingredients until combined, then beat in the chocolate chips.  Cover with plastic wrap and refrigerate at least three hours (Sally says you can go as long as three days, but let’s be real here).  Preheat oven to 350 and let dough sit at room temp for 20 minutes.   Bake 9 – 10 minutes, let cool on rack for five minutes, than transfer to a cooling rack.  

Batch one baked for 9 minutes, batch two for 10, batch three for 11.  I didn’t notice much of a difference, so these cookies are fairly forgiving if you accidentally leave them for an extra minute.  Personally, I found them to be a little on the rich side (perhaps the white chips weren’t such a great idea, but I’m not a fan of the chocolate-and-cinnamon combo), but my husband ate them up.  I had to freeze some so they weren’t all gone by the time I see my brother!  Click here for the full recipe from Sally’s Baking Addiction.
