Time for another tasty recipe from Pam Shaw, owner of Shaw Farms located at 1737 OH-131 in Milford! This week, use your summer veggies to make some Summer Succotash!
What You Need:
- 8 ears of corn
- 1 medium red onion
- 1 yellow bell pepper
- 1 red bell pepper
- 2 – 3 jalapeno peppers (optional)
- 3 – 4 tbs. olive oil
- 2 tbs. butter (optional, this adds a little bit more sweetness)
- salt and pepper as needed
What You Do:
Clean corn, removing shucks and hair. Finely dice red onion. Remove seeds from all peppers and coarsely chop. Heat large burner to medium high. Add half of oil and butter to skillet. Saute onion until transparent. Add corn and continue cooking. (Starch from corn will stick to the bottom of the pan. Using a spatula, scrape bottom often while turning corn and onion mixture.) You may need to add additional oil during this time. When corn starts to brown (5 – 6 minutes), add yellow and red peppers. Cook for additional two minutes, stirring often. Add jalapenos and stir and turn off burner. Let sit for 1 – 2 minutes. This is done so jalapenos warm but don’t heat entire dish!
