The version normally used in our home doesn’t actually have potatoes in it (it’s mostly just a lot of sugary and peanut-buttery goodness), but this more traditional recipe calls for cooked white potatoes.

Potato Candy Ingredients

  • 1/4 cup cooked white potatoes
  • 1 pound confectioners’ sugar (about 3 cups)
  • 1 teaspoon vanilla
  • peanut butter

Method

Mash potatoes, add vanilla and the confectioners’ sugar and mix until a soft dough forms.  Divide dough into fourths, and roll between wax paper until approximately 1/8 inch thick.  Spread a thin (or not-so-thin!) layer of peanut butter over each layer and roll like a jelly roll.  Put in the refrigerator overnight before cutting into pieces.
